I can't give you a particularly good answer without knowing more (and it's not really appropriate for this thread or even the board, really, as your'e asking me to coach you knowing really very little).
Firstly - are you struggling to eat more food or not?... You've "got no problem adding more food" but you're "struggling to eat."
It's tough to solve an ill-defined problem.
