Sounds like you have plenty of room to add food to the post-workout meals, so I'd just do that (making them larger, but not adding a 4th meal, as you haven't got enough time in the day for that).
For now, as a starting place, you could take the carbs (and increased kcal, I presume) you'd normally be having on that 4th day of training and put 1/3 of that each into the post-WO meals you have on the three days you're training now.
